Asparagus Goat Cheese Pizza

An easy dinner or appetizer that is perfect for Spring with it's fresh flavours and seasonal veggies! The Pillsbury pizza crust makes this as easy as can be. Feel free to switch out some of the toppings for what you have available in the fridge, but if you're using Asparagus you HAVE to pair this with a Sauvignon Blanc!

Goat Cheese Mixture

Instructions

  1. Preheat oven to 400 degrees.
  2. Roll out pizza dough and place on greased baking sheet.
  3. Drizzle dough with olive oil and pre-bake for around 8 minutes (as per package directions).
  4. Meanwhile, combine ingredients for the goat cheese mixture. Taste and adjust with salt and lemon as needed.
  5. Remove pizza crust from the oven. Evenly spread goat cheese mixture over the base, then top with half the Mozzarella cheese.
  6. Evenly distribute the asparagus, tomatoes, and pea shoots and finish it off with a drizzle of olive oil.
  7. Bake for 5-10 minutes or until the cheese is golden and bubbly. Let sit for 2-3 minutes before cutting into desired size/shape.
  8. Serve with a chilled glass of New Zealand Sauvignon Blanc!
