Dill Pickle Baked Brie

Why isn’t everyone making dill pickle baked brie?! This easy cheesy crowd-pleaser is almost too good to share. The salty gooey cheese, buttery toasted bread crumbs, and tangy pickles work together to create an appy that pickle-lovers dreams are made of. You can serve this with classic crostini, crackers, or plain potato chips, but just TRY IT with Miss Vickies Spicy Dill Pickle chips. That little bit of spice takes this already incredible snack to a whole new level!

The Wine Pairing

While this is no doubt awesome on it’s own, it’s a thousand times better paired with Prosecco Rosé! The fruit forward bubbles cleanse the palate between each cheesy mouth-coating bite and help to balance out the saltiness to keep you coming back for more.

My Wine Recommendation

I paired this one with the always delicious and affordable Kirkland Signature Prosecco Rosé (available at Costco Liquor for around $9 USD or $12 CAD), but any Prosecco Rosé would do!

Instructions

  1. Preheat oven to 350 degrees.
  2. Score the top of the Brie and top with chopped pickles. Bake at 350 degrees for 10 minutes.
  3. Meanwhile, prepare toasted breadcrumbs. Heat a small pan over medium heat. Melt butter and then add breadcrumbs. Mix well to coat and continue stirring until breadcrumbs start to toast. Once you start to see some browning, remove from heat and transfer to a bowl (they will continue to toast in the hot pan).
  4. Remove Brie from the oven, top with melted butter followed by breadcrumbs. Garnish with pickle slices and serve immediately with spicy dill pickle chips and Prosecco Rosé!
