Grilled Olive and Brie Focaccia Bread Bowl
A delicious, summery alternative to the classic baked Brie: Grilled Brie! This salty cheesy delight is sure to impress your guests, and is surprisingly easy to throw together. All you need is a wheel of Brie, olive oil, whole green olives, and focaccia bread!

Grilled Brie with Olives in a Foccacia Bread Bowl

- Preheat grill to 350 degrees F.
- Strain jar of olives and pour into a grill basket. Toss with olive oil and grill until heated through and slightly charred (about 10 minutes).
- Meanwhile, brush olive oil over both sides of your Brie and place on the grill. Grill for about 2-3 minutes per side, or until it's starting to soften and you have some nice grill marks on the rind.
- Cut a Brie shaped hole in the middle of your Focaccia and drizzle with olive oil. If desired, you can cut the foccacia into a circle and place in an 8-inch round cast-iron skillet. Alternatively, you can leave the Focaccia as is and skip the cast iron skillet for a toastier bread.
- Gently place Brie in the Focaccia, top with the grilled olives, and then drizzle the whole thing with even more olive oil. Finish it off on the grill for another few minutes with the top closed to slightly toast the focaccia and get your Brie all nice and gooey.
- Enjoy immediately with a chilled glass of Lambrusco Bianco!
