Hot Honey Berry Baked Brie

This easy, show-stopping baked Brie recipe is packed with flavour, so easy to throw together, and for all my American friends, the perfect red, white, and blue addition to your Fourth of July festivities! It’s stunning on it’s own with some sourdough crostini to dip, or you can make it the centerpiece of a Fourth of July themed charcuterie board!


The Wine Pairing

The perfect pairing for this beauty is a chilled bottle of Moscato D’Asti DOCG. This iconic wine style from Piedmont, Italy is so special in so many ways. Made from the grape Moscato Bianco, it’s a lightly fizzy (AKA frizzante), medium-sweet, low-alcohol wine with incredibly rich and intense flavours of candied fruit, honey, flowers, spice, and so much more. This wine style has been perfected over centuries and is a prized celebratory wine in Italy. Even if you’re not typically a ‘sweet wine person’, I highly recommend you give this one a try! With an open mind, of course ;)

This pairing works SO well for so many reasons:

  • Sweet + Sweet: The sweetness from the wine matches the sweetness from the honey and berries.

  • Low alcohol + Spice: The low-alcohol doesn’t amplify the chili spice (as a higher alcohol wine would).

  • Contrasting textures: The wine’s crisp acidity and fizz are beautifully palate cleansing between each gooey, cheesy bite.

  • Matching Weight/Intensity: Both the wine and the Brie are a lovely balance of rich and fresh, and have a similar ‘weight’ so neither overpowers the other.

  • Matching Flavours: The fruity/lemony/honeyed flavours of the Brie match those in the wine, so they all play each other up in the best way.

  • Salt/Acid + Flavour: The saltiness of the Brie and the acidity from the lemony marinade both work together to further amplify all of the gorgeous flavours found in this vibrant wine!

ALL of that, plus - The lower alcohol content of Moscato D’Asti DOCG (usually between 5-6%) makes it the perfect day drinking wine! So if you start drinking in the morning, you might not need a mid-afternoon nap ;)

My Recommendation

I paired this with the Beni di Batasiolo Bosc D’la Rei Moscato D’Asti DOCG and I HIGHLY recommend it. Such a stunning expression of this wine style!

Hot Honey Berry Baked Brie

Ingredients

For the Brie
For the marinated berries

Instructions

  1. Preheat oven to 350 degrees
  2. Skor the top of your Brie wheel and then brush with honey and chili oil. Bake at 350 degrees for 10-15 minutes (10 if you want it on the firmer side, 15 if prefer it on the liquidy side).
  3. Meanwhile, prepare your marinated berries. In a small to medium mixing bowl, add fresh lemon juice, honey, chili oil, and fresh mint. Mix well to combine, then add fresh strawberries (thinly sliced) and blueberries. Toss/stir to coat in the marinated mixture and set aside.
  4. Remove Brie from oven. Using a serated spoon to leave behind the marinade, top with marinated berries. Option to add 1-2 tbsp of the marinade as well.
  5. Serve immediately with a chilled glass (or 3) of Moscato D'Asti DOCG and sourdough crostini! This makes a beautiful red, white, and blue centerpiece to a 4th of July themed charcuterie board!
