Pickled Strawberry Pie Baked Brie

Pickled strawberries
Brie
Instructions
For the pickles strawberries
- Add sliced strawberries, vinegar, sugar, salt, peppercorns, sage, and water to a container that you can seal tightly.
- Seal container, shake well and leave in the fridge overnight for 12-24 hours.
- Once ready, drain the liquid and set aside for the Brie!
For the Brie
- Preheat oven to 400 F
- Place Brie wheel is an oven safe Brie baking dish
- Score top of the Brie and top with pickled strawberries.
- Roll out puff pastry to desired shape/size to fit overtop your Brie and strawberries. Place on top of the Brie and then cut a small X in it to let the steam escape.
- Whisk together egg and water in a small bowl to create an egg wash and brush overtop puff pastry.
- Bake at 400 F for 15 minutes or until crust is flaky and browning.
- Let cool for a few minutes and then serve with a chilled glass of rosé Pet Nat!
