Sun Dried Tomato Garlic Parmesan Dip

This Tuscan-inspired dip is out of this world. It is so easy to throw together and absolutely packed with flavour! This will be a hit at any get-together, or can be the perfect lazy dinner for one if you’re into dip dinner (aka “girl dinner”) like I am! Just pop open a bag of Truffle Oil and Sea Salt chips and a bottle of wine (see pairing below) and you are in for a TREAT.

The Wine Pairing

Pair this dip with a Rosso di Montalcino - AKA a Sangiovese from Tuscany that is similar in many ways to the more commonly known Chianti Classico. This Italian red wine style is rich and bold from the higher alcohol but still crisp and vibrant from the higher acidity, making it the perfect match for this decadently creamy yet fresh dip! Plus, this wine is basically a guaranteed great pairing for any hard salty italian cheese (like Parmesan), AND it shares those sundried tomato and dried herb flavours from the dip. So much pairing perfection going on here, you need to try it!

My Wine Recommendation

I recommend La Magia Rosso di Montalcino. Made from 100% Sangiovese (the same grape used in their stunning Brunello di Montalcino) but aged for only 6 months in near-neutral oak casks. This means that the beautiful earthy and fresh red fruit flavours are left to shine, but the acidity remains nice and high and the tannins are given enough time to soften. The result is a bold red with smooth tannins, vibrant high acidity, and stunning fresh flavour. If you can’t find this wine, you can pick up any Rosso di Montalcino, Chianti Classico, or even a drool-worthy Brunello di Montalcino if you’re feeling fancy!

Instructions

  1. Mix all ingredients in a mixing bowl then transfer to your serving dish. Garnish with more ground or shredded parm, chopped sundried tomatoes, chopped basil, and black pepper. Finish it off with a drizzle of extra virgin olive oil!
  2. Serve with Truffle & Sea Salt Chips and a glass of Sangiovese (like this awesome Rosso di Montalcino)!
