7 Baked Brie Recipes Paired with Bubbles!

No other appetizer draws in a crowd quite like baked Brie, and when you pair it with a chilled glass of bubbles it takes on a whole new level of deliciousness! Here is a round-up of 7easy baked Brie recipes, each with the PERFECT sparkling wine pairing. These are all from Season 1 of my viral Bubbles & Brie series on Instagram! Why does Brie pair so well with bubbles?

  1. Contrasting texture: Brie coats your mouth with it’s rich, gooey, buttery texture, whereas sparkling wine cleanses your palate with it’s higher acidity and it’s ‘scrubbing bubbles’ effect. When you follow up a bite of gooey Brie with a sip of bubbles, you’re ready to take on the next bite with a refreshed palate!

  2. Matching weight: Bubbles and Brie are on the lighter side in the world of cheese and wine, and that matching weight makes it so neither will overpower the other!

  3. Salt vs. acidity: Magic happens when you combine salty cheese with acidic wine! The salt from the cheese helps temper the acidity and amps up the beautiful flavours of the wine, making the wine experience that much better!

  4. Matching flavours: Brie itself has some yeasty notes to it from the rind, which tends to pair well with sparkling wine styles that have some bready, yeasty flavours, like Champagne, Cava, Sekt, or Pet Nat. These wines are made in a way that exposes them to the lees (AKA dead yeast cells) for an extended period of time before bottling. When it comes to baked Brie, you can also amp up the matching flavours with your choice of toppings! For example, Prosecco Rosé will likely have some red fruit flavours (like strawberry, cherry, or watermelon), so adding these flavours to the Brie will further contribute to the perfect pairing.

Probably the easiest and most delicious of all the Brie recipes! Pair this with your favourite Prosecco for the perfect contrasting pairing.

Who doesn’t love a cheesy pie? This pickled strawberry pie baked Brie is sweet, salty, and tangy and perfectly matches the funkiness of a Pet Nat!
