Bruschetta Grilled Cheese
Wine Pairing: Ricasoli Brolio Chianti Classico

Ingredients
- 2 thick slices of sourdough
- Butter + more butter
- Shredded mozzarella
- Bruschetta (Find the Bruschetta recipe under Fresh Mozzarella & Parmesan Crisp Bruschetta)
Directions:
- Butter both sides of both slices of bread
- Add a big handful of shredded mozzarella, followed by about 1/2 cup of bruschetta, and then another handful of mozzarella
- Stick the slices together and grill covered over medium heat for about 5 minutes. Flip and grill for another 5 minutes on the other side. Turn off the heat and keep covered to let the cheese melt.
- Enjoy immediately with a big glass of Chianti Classico! *TIP* chill the wine for 20 minutes in the fridge before drinking!
