Creamy Feta Dill Dip

This re-creation of Litehouse Opa Feta Dill Dressing into a dip is SO freaking good. I paired it with the delicious and insanely aromatic Gilvesy Rajnai Rizling (Riesling) - a dry (not sweet) riesling from Hungary that burstin with lemon lime, green apple and all the minerals. The matching lemony flavours in the wine and dip, the salty feta tempering the high acidity, and the fresh palate cleansing effects of the wine after each creamy bit are only a few of the reasons this pairing works so well!
RECIPE
Ingredients:
- ¾ cup sour cream (I used 14% - highly recommend).
- ½ cup plain Greek-Style yogurt (minimum 2% MF)
- ¼ cup mayonnaise
- ¼ cup fresh dill
- 1-2 tsp freeze-dried dill
- 1-2 cloves garlic, pressed
- ¾ cup of Greek-style feta
- 1 tbsp lemon zest
- Juice from ½ a lemon
- Pepper to taste
- 2 tbsp extra virgin olive oil
Directions:
- Add all ingredients, except for olive oil, to a food processor and process until smooth.
- Add olive oil slowly while processing for that extra smooth creamy consistency.
- Taste and adjust ingredients as needed, and then transfer to your cutest dip dish.
- Enjoy with your favourite regular chips and dry riesling! *NOTE: You can eat this right away but it’s even better once it sits overnight!
