French Onion Dip
Wine Pairing:
Mary Taylor 2019 Coteaux de Giennois Rouge - 85% Pinot Noir / 15% Gamay blend from the Loire Valley, France made by winemaker Alice Berthier. Aged for 10-12 months in neutral oak, this is such an elegant and deceptively powerful wine!
Gruyère and Pinot Noir are basically made for each other with their complementary flavours and mouthfeel, the bright fruity notes of the wine are perfectly matched to the sweet creaminess of the onions, and the wine’s bright acidity is wonderfully palate cleansing!

RECIPE
Ingredients:
- 1 medium yellow onion, thinly sliced
- 3 tbsp butter
- 1 cup of pre-made French onion dip (You can use Helluva dip here, or any brand you want!)
- 1/2 cup softened cream cheese
- 1 cup sour cream
- 1 cup shredded Gruyere
Directions:
- Melt butter in a pan over medium heat and add thinly sliced onions.
- Coat onions in butter, turn heat to low-medium, cover and set aside. Come back to it every 5-10 minutes to give them a stir. It will take about 45-60 minutes to caramelize the onions so make sure you give yourself enough time! Towards the end, turn the heat up to medium to help with the browning.
- While the onions are caramelizing, add all other ingredients to a bowl, mix and set aside.
- Add the buttery caramelized onions to the bowl when they’re ready and mix. NOTE: If you want it to look extra fancy, keep some onions for the top!
- You can serve this right away, but for best results keep in the fridge overnight. Enjoy with your favourite crunchy plain original chips!
