Pecorino-Crusted 4 Cheese Grilled Cheese

I can’t say enough great things about this (Torre Zambra Poggio Salaia Pecorino). It’s so intensely aromatic (aka bursting aromas and flavour) and it has that salty, mineral-driven deliciousness that takes white wine to the NEXT LEVEL. RECIPE

Ingredients:

  • Italian bread (sliced)

  • 2-3 tbsp butter (+ 1 tbsp for grilling)

  • 2 tbsp softened cream cheese

  • 5 thin slices of Pecorino Romano (+ some grated for the crust)

  • 1/4 cup grated mozzarella

  • 2 tbsp grated Parmesan

Directions:

  • Butter both sides of 2 slices of bread

  • Spread a layer of softened cream cheese on the inside of each slice

  • Add a half the Mozzarella, a layer of Pecorino slices, the grated Parmesan, followed by the rest of the Mozzarella.

  • Press the two slices together and clean up any stray cheese by sticking it to the outside of the bread.

  • Heat pan over medium heat. Melt butter, spread around the pan, and then add the sandwich. Using a fine cheese grater (or zester), grate pecorino on the outside of the bread to help form the crust. Flip immediately and do the same on the other side.

  • Cover and let cook until golden and crispy and cheese is starting to meal (~5 minutes). Cover again, turn heat to low-medium and leave for another 5-10 minutes (until the other side is golden and crispy and the cheese is perfectly melty).

  • Let cool for a minute or two and enjoy with a chilled glass of Pecorino!
