Guinness Cheddar Beer Cheese Dip
Name a better way to celebrate St. Patricks Day than with silky smooth beer cheese dip and Guinness! This recipe is truly addictive and unique. It’s packed with Guinness flavour, giving it a subtle bitterness that works so well with the intense flavour from the old cheddar. Wine had to step aside for this one - First, because it’s St. Paddy’s Day (so you just have to drink beer), and 2nd, because if you cook with something it will almost always be a perfect pairing! It creates matching flavours that elevate each other in the best possible way. The creamy texture of this beer also matches the creaminess of the dip, but there’s enough contrast in mouthfeel that you have some essential palate cleansing in between each rich bite.
For all my non-drinking friends, you can make this using the Guinness 0.0! This non-alcoholic Guinness is so incredibly similar to the original one it blows my mind. As a mama-to-be, I’m so happy that I can still enjoy my favourite St. Paddy’s bevvy!
Guinness Cheddar Beer Cheese Dip
Ingredients
- 3 tbsp butter
- 3 garlic cloves, pressed
- 3 tbsp flour
- 1 1/2 cups Guinness (regular or non-alcoholic will work!)
- 1/2 cup cream cheese
- 1 tsp Dijon mustard
- 1 tsp Worcestershire
- 3 cups orange old cheddar, shredded (I used Balderson Old Coloured Cheddar)
- Pretzel crisps to serve
Instructions
- Melt butter in a saucepan over medium heat.
- Add pressed garlic (stir for approximately 1 minute) followed by flour. Stir until it forms a thin paste.
- Add 1 cup of Guinness (you can use alcoholic or non-alcoholic) and stir consistently until mixture begins to thicken. Add the remaining 1/2 cup and stir again.
- Add dijon mustard, Worcestershire sauce, and cream cheese. Stir until cream cheese is melted.
- 1 cup at a time, add the shredded cheese, mixing continuously until mixture is silky and smooth.
- Pour into a microwave safe dish so that it can be reheated as needed. Serve immediately with a cold Guinness and pretzel crisps!
