Burrata Pesto Foccacia Sandwich

This over-the-top, rich, saucy sandwhich is everything you would expect it to be and more. With layers of salty pesto and prosciutto, tangy tomatoes and creamy burrata, it's a decadent flavour explosion that is perfectly paired with a refreshing and palate cleansing chilled glass of Vermentino!

Ingredients

  • Fresh herb and garlic focaccia
  • 1/4 cup (4 tbsp) garlic butter
  • 1/4 cup mayonnaise
  • 2 tbsp pesto
  • Chopped cherry tomatoes
  • 1-2 tsp extra virgin olive oil
  • 1/2 cup Chopped roasted red bell peppers in oil
  • 100g (approximately 5 slices) Prosciutto
  • 1 ball of burrata
  • Salt and pepper

Instructions

  1. Cut focaccia in half lengthwise.
  2. Spread each half with garlic butter. Broil in the oven for 2-4 minutes until toasted.
  3. Mix together mayonnaise and pesto to make pesto mayo. Spread a generous amount each half of the bread.
  4. Mix together chopped cherry tomatoes, olive oil, and salt and pepper. Spread tomato mixture over one half of the bread.
  5. On the same side, spread chopped roasted bell peppers, followed by prosciutto.
  6. Pull apart Burrata and spread evenly over the prosciutto, then season with salt and pepper.
  7. Top with the second half of focaccia, cut in half, and enjoy!
