Queso Fundido

Ingredients:

- 2 tablespoons of butter
- 1 shallot, finely chopped
- 2 cloves of garlic, pressed
- ½ cup lager (I used Coors light, because we have a neverending Costco pack of it)
- 2 cups of grated manchego (or 1 cup Manchego + 1 cup cheddar)
- 1 tbsp flour (to coat the cheese)
- ½-¾ cup chopped chorizo sausage
- ¼ cup chopped Poblano pepper
- ½-¾ cup mild or medium salsa

Directions:

- Heat a 6-9 inch skillet over low-medium heat. Add butter and melt.
- Add shallot and garlic and let soften for ~10 minutes, stirring regularly to make sure it doesn’t burn.

- While the shallots/garlic are softening, grate your cheese. Add flour to grated cheese and toss to coat.

- Add lager to your skillet to deglaze and then start adding cheese in batches, whisking as you go for a silky smooth gooey texture.
- Once your cheese is nice and melty, top with chorizo, peppers, and salsa (or any of your preferred toppings).

- Enjoy immediately with tortilla chips!
